  • boneless, skinless chicken breasts
  • salt
  • pepper
  • oil
  • organic chicken broth
  • unsweetened coconut milk
  • whole-grain Dijon mustard (or use regular Dijon)
  • chopped parsley
  1. Sprinkle chicken with salt and pepper.
  2. Cook in hot oil in a large skillet over medium-high heat 2 minutes per side; remove from skillet, and keep warm.
  3. Add broth to skillet; bring to a boil, and cook 3 minutes.
  4. Add coconut milk and mustard; return to a boil, and cook 3 minutes.
  5. Add chicken; simmer 5 minutes or until chicken is done and sauce is thickened.

Lemony Asparagus
Preheat oven to 400°F. Combine asparagus, lemon zest, 1½ Tbsp lemon juice, and oil on a rimmed baking sheet. Sprinkle lightly with lemon pepper. Toss and spread in a single layer.
Bake 8 to 10 minutes or until asparagus is crisp-tender.
