Ingredients
  • Olive oil
  • chopped fresh cilantro
  • clove garlic, minced
  • pork Chops
  • kosher salt
  • pepper
Instructions
  1. Preheat oven to 425°F. Sprinkle pork with salt and pepper on a baking sheet.
  2. Bake 18 to 22 minutes or until meat thermometer reads 145°F;
  3. let stand 10 minutes before slicing.
Side Dish
SPRING MIX SALAD

Serve Spring Mix and Top with salad toppings (diced onions, tomatoes, etc)
pour dressing on top.

Ingredients
  • boneless, skinless chicken breasts
  • salt
  • pepper
  • oil
  • organic chicken broth
  • unsweetened coconut milk
  • whole-grain Dijon mustard (or use regular Dijon)
  • chopped parsley
Instructions
  1. Sprinkle chicken with salt and pepper.
  2. Cook in hot oil in a large skillet over medium-high heat 2 minutes per side; remove from skillet, and keep warm.
  3. Add broth to skillet; bring to a boil, and cook 3 minutes.
  4. Add coconut milk and mustard; return to a boil, and cook 3 minutes.
  5. Add chicken; simmer 5 minutes or until chicken is done and sauce is thickened.
Side Dish
Lemony Asparagus
Preheat oven to 400°F. Combine asparagus, lemon zest, 1½ Tbsp lemon juice, and oil on a rimmed baking sheet. Sprinkle lightly with lemon pepper. Toss and spread in a single layer.
Bake 8 to 10 minutes or until asparagus is crisp-tender.

  • Tri-Tip Steak
  • balsamic vinegar
  • whole-grain mustard
  • cloves garlic, minced
  • pepper
  • rosemary
Instructions
  1. Place beef on a slow cooker
  2. Top with vinegar. (optional add sliced onions)
  3. Cover and cook on LOW 6 to 8 hours or until beef is tender.

Salisbury Steak with Caramelized Onion Gravy

Ingredients
  • grass-fed ground beef
  • whole-grain mustard
  • salt
  • pepper
  • 1 onion, thinly sliced
  • olive/ or avocado oil
  • tomato paste
  • thyme
  • chicken broth
Instructions
  1. Shape beef mixture into 3 patties.
  2. Cook patties in a large skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Keep warm.
  3. Meanwhile, cook onion in 1tsp hot oil in a large skillet over medium heat, covered, 10 minutes, stirring occasionally, or until tender. Uncover, increase heat to medium-high, and cook, stirring often, until very tender and caramel colored.
  4. Stir in tomato sauce. bring to a boil, and cook 5 minutes. Spoon gravy over patties.
Side Dish
Garlic Mashed Sweet Potatoes

Boil on a pot with hot water, enough to cover potatoes until tender. Cook garlic in hot oil in a small skillet over medium heat 30 seconds. Stir garlic, salt, and pepper into potatoes; mash to desired consistency. (optional-add mozzarella or cheddar cheese for extra flavor)
